Beets with Orange Vinaigrette

1-2 bunches fresh beets

2T raspberry vinegar

2T orange juice

1-3 T olive oil

½ tsp sugar

Kosher salt and ground black pepper

½ cup diced red onion

Orange zest and orange segments

Boil beets for approx 1 hour until just tender. Drain and cool enough to handle.  Peel and dice beets into ½’ pieces.  In mixing bowl combine beets with all other ingredients.  Mix well and serve chilled or at room temp.
